These deliciously sweet and salty cookies are just a little different. For the salt in the recipe, we used the French Lemon Tarragon Coarse Sea Salt from our LUXE subscription for added flavor, but any coarse salt will do.

Ingredients
1 cup (120g) All purpose flour
¾ teaspoon baking powder
½ cup butter, softened
½ cup granulated sugar
3 tablespoons applesauce
1 teaspoon lemon juice
1 teaspoon vanilla extract
Pinch of kala namak (Indian black salt; optional)
¼ cup granulated sugar
2 teaspoons coarse sea salt
For cookie dough
For rolling
Directions
Preheat oven to 375°F (or 350°F if using a convection oven).
Combine flour and baking powder with a whisk, set aside.
In a stand mixer or with a handheld mixer, cream together softened butter and ½ cup sugar for three minutes, or until the mixture is light and fluffy.
Add apple sauce, lemon juice, vanilla, and kala namak (if using) to the bowl of the mixer. Mix on low until combined, scraping down the bowl as necessary.
Add the flour mixture and combine on low, then beat on high for just 30 seconds.
In a small mixing bowl, combine ¼ cup granulated sugar and 2 teaspoons coarse ground sea salt (we used the French lemon tarragon salt from our LUXE box).
Use a portion scoop or large spoon to drop 1 ounce (2 tablespoon) balls of dough into the sugar and salt mixture. Toss to coat. Be delicate handling the dough balls, as the dough will be very, very soft.
Arrange on a baking sheet a couple inches apart and bake for 10-12 minutes.
Cool on the baking sheet before serving.
