Basque Seasoning Tips

This Bouquet Garni blend contains all the essential herbs and aromatics to create a flavorful stock, sauce, or soup. The recipe for this seasoning blend comes straight from French tradition!

Boquet Garni Tips
- Simmer a couple tablespoons of Boquet Garni along with your vegetable refuse to create a rich, delicious veggie stock.
- Create a satchel with cheesecloth and twine and simmer in any soup or sauce to add layers of flavor. Remove before cooking, like a bay leaf. If you don’t have cheesecloth, a coffee filter will work, too!

Paella Seasoning
Paella is probably the most famous (and delicious) Spanish dish. It’s traditionally made with various types of seafood and saffron-kissed rice and served in the same cast iron pan where it was cooked, family style.

- It’s not just for rice! Stir some into the water before you make quinoa, bulgur, couscous, farro, or any other grain–like fonio!
- Not into seafood? That’s fine. Use any other protein or vegetable and you can still make a delicious paella. It’s really all about the rice and a well seasoned pan.

We love Allspice Culinarium so much that they have something in each of our boxes, and our introduction to them was this Umami Dust! It can be a rich, flavorful base to a dish or robust finishing touch–it’s that versatile.

Umami Dust
- Use as the starter for a hearty gravy by mixing equal parts flour, Umami Dust, and vegan butter. You’ll fool any onmnivore with how flavorful the end result is!
- Umami Dust works particularly well with lentils and shines in a stew.
- Combine with chili powder and smoked paprika for a powerful “meaty” rub — fantastic on grilled eggplant!
Artisan Salt Company
Bolivian Rose Sea Salt
Pink salt has been making waves in the mainstream culinary scene for about a decade now, so it makes sense that specific varieties would be of interest to chefs! Bolivian Rose Sea Salt is harvested in the Andes Mountains and distributed exclusively by Artisan Salt Company.

Bolivian Rose Sea Salt Tips
- These pale pink crystals are packed with flavor, so feel free to toss them directly into a salt mill for table use.
- Use the crystals whole to garnish caramels, cookies or other sweets.
- Use a squeeze of grapefruit, then dry the salt on the lowest setting of your oven. Grind coarsely and use as a garnish to cocktails!
- Use a tablespoon of whole salt crystals to salt boiling pasta water. Stir and dissolve before adding pasta!
Sel Gris Sea Salt
Sel Gris is the famous grey salt renowned by French chefs and gourmands across the globe. Sel gris is often referred to as the “saltiest salt,” and has a flavor complexity that you won’t get from basic kosher salt.

Sel Gris Sea Salt Tips
- Sel gris can be used as a table salt when you really want to experience the depth of flavor it offers, but make sure to warn dinner guests to go easy on the shaker — this salt can be saltier than most folks are used to!
- Use alongside plain kosher salt in brines for eggplant or chicken to add a little something extra.
- This salt is aces in pasta dishes. Aromatics sautéed in a little butter, starchy pasta water, and sel gris can make a fantastic base sauce that whips up in minutes.

Bourbon Smoked Chili Powder Tips
- Add it to chili, of course. But you knew that. It’s practically begging you to be put in chili.
- Recipe calls for black pepper? Halve the amount and add a touch of this chili powder. It will create a powerful flavor on the palate while still allowing the flavor of the black pepper to shine.
- This chili powder loves chocolate. It’s like they were meant for each other. Use a pinch in any recipe that calls for chocolate: mole sauce, cookies, hot cocoa. You won’t regret it.

Crimson & Clove
Kala Namak
Kala Namak is otherwise known as Indian black salt. No, not the crunch charcoal-infused crystals from Hawaii. This salt is actually a light pink in color! You’ll probably smell it before you even open the package, too–it’s not the most pleasant aroma. It smells and tastes like eggs, though, and it’s a stellar tool in vegan cooking and baking. Don’t worry–that smell cooks out.

Kala Namak Tips
- Add a pinch of Kala Namak to your egg replacer while baking, whether it’s aquafaba, flax, or even banana. It will contribute a that “eggy” flavor to the final product. Remember to adjust other salt in your recipe accordingly.
- Use in a tofu scramble with yellow curry powder or turmeric for a more realistic vegan scrambled egg.
- Make the perfect vegan egg wash with a combo of aquafaba and kala namak!

The Infinity Seasoning Blend is modeled after a classic “everything” bagel with a smoky, gourmet touch. The spices, seeds, and aromatics in this blend add complexity to its base of cherrywood smoked sea salt.

Infinity Seasoning Blend Tips
- A pinch of Infinity will liven up boring mayonnaise-based salads like coleslaw, tuna or chicken salad
- Add to a grain dish like couscous or a rice pilaf with a touch of olive oil for a fluffy and interesting side dish (like SoLADeli’s infused olive oil included in this kit)
- Work 1 tbsp Infinity into 1/4 cup softened butter for a luxurious and complex compound butter
Leaf Beef Seasoning Blend
Leaf Beef is a miso- and cumin-based cruelty free flavor enhancer with hints of mustard and rosemary.

Shallot Infused Olive Oil Tips
- The flavor is more subdued than the scent, so this oil really shines as a finishing ingredient — try it on top of hummus, or mixed with your favorite balsamic as a bread dip.
- Add a couple drops to a batch of rice for a subtle scent and flavor.
- If you’re using this shallot oil to pan fry, make sure to keep the heat to medium — olive oil has a lower smoke point than vegetable or canola oil.
Solajo Seasoning Blend
Chef Ellie’s Solajo Seasoning Blend packs a wallop of flavor with a touch of heat. You’ll never look at your old garlic pepper shaker the same after trying our signature version with two types of chiles, smoked black peppercorns, and a richer garlic note than you’d expect from a dry seasoning. A little sprinkle of this will add boldness to the simplest dish, but it really does its finest work on proteins.

Solajo Seasoning Blend Tips
- Add a dash to scrambled eggs before cooking for a subtle kick
- Solajo + a dash of salt are all you need to season tofu, shrimp, chicken, or pork for the grill

Tisthe Seasoning Blend Tips
- Use it anywhere you would use cinnamon for a more complex, warming flavor.
- There’s a teensy tiny bit of heat to this seasoning, thanks to the inclusion of crushed Aleppo chiles. It’s not enough to scare the kids away, but it’ll perk up your dessert just a hair.
- While this seasoning blend has a sweeter profile, there is zero sugar in it–don’t be afraid to try it in savory dishes!

- The herbs in the Ferla blend make it ideal for a simple pasta dressing. Combine with olive oil, kosher salt, and some freshly roasted veggies for an incredible comfort food meal.

Kampot + Salt
The Kampot + Salt from Curio Spice Co. is an almost-all purpose seasoning with complimentary notes of tarragon, citrus, and ginger. Kampot is a peppercorn that hails from Cambodia and was nearly wiped out at one point in history. It has a unique flavor that certainly sets it apart from your standard black pepper.

Da Kine Hawaiian Rub
“Da kine” means “the best” and we’re inclined to agree. Da Kine is a family-owned ingredient artisan from–you guessed it–Hawaii. This “original” rub functions as an all-purpose seasoning, but adds new life to classic dishes with its bright flavors and the addition of Kona coffee.

Jerk Seasoning
H&K Gourmet is one of our favorite spice artisans because they create spice blends so versatile they can be used on proteins, in broths, on veggies, and anywhere else you can image. This Jamaican-inspired jerk seasoning is one of their newest offerings, relying on a light spice and herbaceousness to convey the traditional island flavor with plenty of room for improvisation.

Jerk Seasoning Tips
- Let’s state the obvious: this seasoning is awesome as a rub on meats, seafood, or tofu.
- Spice up your spread by mixing a tablespoon of this jerk seasoning into mayonnaise, greek yogurt, or hummus. Your sandwich will thank you.
- This seasoning adds a nice punch to a brine for eggplant or chicken. To make a brine, heat 1 tablespoon kosher salt and 1 tablespoon jerk seasoning per quart of water until salt dissolves. Cool, then brine your eggplant for about 30 minutes, or your chicken overnight.

- This hot sauce tastes like it was made for breakfast foods! Try it over home fries, biscuits and gravy, or scrambled eggs.
- Every good jambalaya calls for a dose of hot sauce, and Marie’s garlic pepper sauce is absolutely perfect for the dish, bringing a significant amount of heat with the fresh habanero flavor.

- Follow the instructions on the bag, it’s about as easy as it gets! It’s a 2:1 ratio (water:grain), simply simmer, let stand, and fluff with a fork. If it seems soggy? Leave it on the heat a little longer. Too dry? Add a splash of water.
- To make a rich side dish, make your fonio pilaf-style by using broth or stock in place of water.
